Profiteroles With Cinnamon Pastry Cream

I’m not sure what it is, but I’ve had a hard time getting into the holiday spirit this year. Don’t get me wrong, I’m beyond excited to spend time with family all next week and have an extended break from work. I’m just kind of in disbelief that Christmas is exactly one week (!!!) away. I have tons of shopping to do, my house is barely decorated, and I’ve made exactly zero Christmas cookies. Instead I made you…profiteroles? While they may not be loaded with chocolate or slathered in red and green icing, I’d argue these bite-sized little treats are still plenty festive.

Brown Butter White Chocolate Macadamia Nut Cookies

Brown butter. White chocolate. Macadamia nuts. These cookies have it all. I remember very clearly the first time I tried a white chocolate macadamia nut cookie. I was at a Subway and tried to order a chocolate chip cookie with my sandwich. They were out, so I was offered another cookie in its place. Not being a fan of raisins, I chose the one with white chocolate, even though I’d never heard of macadamia nuts before. A lifelong love affair was born that day. And these massive brown butter white chocolate macadamia nut cookies are the next step in that relationship.

Latkes

I’m cutting it real close to the end of Hanukkah here (it ends tonight!), but I had to jump on the latkes train before it pulled out of the station for another year. I must be friends with/follow a lot more Jews than I thought, because my Instagram and Facebook feeds have been full of latkes and challah and jelly donuts galore. I had to get in on that action. Latkes have been on my to-make list for ages, so I figured this was my year.

Dewhursts Do Japan: Kyoto

While I loved every single city we visited in Japan, Kyoto captured my heart. I don’t know what I expected when we left the peaceful quiet of Komatsu and Hoshi, but it definitely wasn’t to absolutely fall in love with this gorgeous city. By all rights, I should have hated Kyoto (relatively speaking, of course). The things we wanted to see were much more spread out than in any other city, and the transportation system was much more difficult to navigate. But none of that mattered when I got my first glimpse of the city’s canals and side streets at twilight.

Chocolate Peanut Butter No-Bake Cookies

Today’s recipe is quite possibly the easiest one I’ve ever shared. (The only exception may be this smoothie–throwing everything in a blender doesn’t really count as a recipe, does it?) I try to make an assortment of treats for my friends and their families every year around this time, just because I love baking and I always end up with more than I know what to do with. A girl can only eat so many cookies, you know. When I asked my friend Erin what kinds of things she and her family would like for Christmas this year, she casually requested I make them for Thanksgiving instead, when her house would be full of more than just her parents and sister. I happily obliged and asked for suggestions from the people who would be visiting. Chocolate peanut butter no-bake cookies were at the top of the list, and since I’ve never made these cookies before, I was glad to give them a shot.
