Fried rice may be one of my ultimate guilty pleasures. If you take me out for Chinese food and I don’t order it, check if there’s something wrong with me. It was the first Asian food I ever learned to like (I was on a strictly American and Italian food diet until I was a senior in college), and it’s been my number one choice ever since. Any form will do–I’m far from particular–but I do have my special favorites. Shrimp is welcome in just about any form, and while green onions are tolerable, sliced sweet onions are much preferred. Carrots and peas add great crunch, but bell peppers are even better. And add some pineapple? I’m a goner.
I’ve had a serious obsession with pineapple lately. I’ve been buying them much faster than I can actually polish them off, so I’ve been looking for ways to use up the leftovers. (I’ve got another pineapple recipe to share on Friday!) The same thing happened with fresh peaches a few weeks ago. The peaches at the store were just so beautiful and fragrant that a few too many found themselves in my grocery cart. After eating some of them fresh, I was looking for new ideas. So into the blender the fruits went and a few hours later I was pulling a super delicious, 2-ingredient pop from the freezer. Ahhh Popsicles. There’s nothing better than blending up two of my favorite fruits and pouring them into a Popsicle mold.
