Mint Julep

Do you watch the Kentucky Derby? This weekend marks the race’s 141st year, and for the last five or so, I’ve been obsessed. I don’t know what it is about Derby Day, but it sucks me in and I can’t get enough of it. Maybe it’s the fact that I’ve always loved horses, but I really think it’s because when you go to the Derby, you go big. Fancy sundresses, suits for the guys, and oh, those hats! Who doesn’t love seeing a classy lady in a hat three times bigger than her head? (Maybe that’s just me.) Another thing the Kentucky Derby is known for? The super refreshing mint julep.

Vanilla Peach Crisp

When it comes to simple desserts, crisps and crumbles are king. Marshmallow Jam Bars

I cannot believe it has taken me this long to share these incredible little bars with you! I got this recipe from Joy the Baker, and I quickly fell in love with it. She calls them toasted marshmallow squares (which they obviously are), but I renamed them to marshmallow jam bars. My favorite part about this easy dessert is the jam layer, so I wanted to make sure that layer was front and center in the name.

Three-Cheese Mac and Cheese

I see that look you’re giving me through the computer. Baked mac and cheese when it’s supposed to be finally warming up outside? I may not be the best blogger when it comes to cooking with the seasons (still no asparagus or rhubarb here, my apologies), but this recipe comes to you out of pure necessity. I needed mac and cheese in my life. It also helps that I got to make this when Ben is out of town, since he hates everything in these little bowls with a passion. Not just one or two cheeses, but three? Count him way, way out.

Vanilla Cinnamon Shortbread

I made us cookies! Again. I feel like whenever I have a lack of inspiration on what to make, cookies are always my fallback. They never disappoint (especially not in this house), and the varieties are seemingly endless. These vanilla cinnamon shortbread cookies have been lurking in the depths of my Pinterest boards for a long time, so when I got the itch to bake but didn’t know what exactly I wanted, they were the perfect solution.
