Corn Muffins

Oh corn muffins, I love you. What is it about food in different-than-normal forms that makes my level of obsession go through the roof? It always happens. I have a recipe for chicken Parmesan meatballs that is out of this world. I keep meaning to share it here, because it’s one of my favorite dinners–quick, easy to throw together, and super flavorful. Maybe soon. But the fact that it is chicken Parm in mini meatball form just adds to how much I love them. Or this recipe for pizza waffles (what?!). Pizza is great, but there’s something about baking those flavors into a waffle that makes it addictive. (Ben doesn’t feel the same on the pizza waffle front. He’d prefer his pizza in regular form, thank you very much.)

Which brings me back to these little corn muffins. I like cornbread (especially if you cook it in a cast iron skillet), but there’s just something about corn muffins that I just can’t get enough of. Another thought: maybe it’s just my obsession with making cupcakes, carried over to another form of food. Whatever it is, I can’t stop eating these little dudes.

Banana Pudding

Some food memories are too strong to shake, no matter how much time has passed since your last taste. I have such vivid and strangely vague memories of my grandma serving banana pudding on holidays and at family gatherings. Spending time in her kitchen is a huge part of my foundation for cooking, and yet I don’t remember ever actually making banana pudding with her. We made blackberry cobbler and strawberry jam, homemade mashed potatoes and Texas sheet cake. We’d bread pork chops and knead dough. My brothers and I spent hours on her back porch, rolling giant coffee cans filled with ice and rock salt back and forth to make some of the freshest, most vividly vanilla ice cream I’ve ever had, but the banana pudding just showed up, somehow, without any fuss or fanfare. It was simple, yet perfectly done.

Blackberry Swirl Meringues

Finally, a wedding update! In the last few weeks, we’ve been making some amazing progress on our wedding planning. I’ve had a lot of people tell me that it’s nearly impossible to plan a wedding in less than a year. Venues fill up, photographers get booked, and things get too crazy to make it worth it. Since we took basically all of December to just hang out (and stare at my gorgeous ring), we’re going to have right around 9 months to plan the best party ever, and I think we’re gonna do just fine.

Mint Chocolate Chip Ice Cream

I love ice cream. I’ll take it in any type, quantity, or flavor. Soft serve vanilla/chocolate swirl? Pile it high in one of those tiny, still-warm buffet dishes, please. I’m always game for a double scoop of cookie dough in a freshly made waffle cone. Gelato? Give me salted caramel with one of those teensy sample spoons to savor every bite. I even love frozen custard and those uber trendy self-serve fro-yo bars (one near our office in Indianapolis makes a salted caramel pretzel frozen yogurt that nearly kills me). When it comes to flavors, I can’t pick a favorite–please don’t make me try. I do have some trusted standbys, though, and mint chocolate chip ice cream ranks realllly high on my list. Oddly enough, it’s one of those flavors that I never liked as a kid. It feels like I just woke up one day with a hankering for that light freshness studded with chocolate.

Dark Chocolate Orange Brioche

Friends, if you live anywhere near St. Louis and have never been to their Mardi Gras celebration, you must go. This year’s party was on Valentine’s Day, and despite living less than 20 minutes away for most of my life, it was my first time. I was blown away by the utter silliness that surrounded us the whole day. I’m not really one to go out and get raging drunk at any time of the day, especially not at 10am (and the party was pretty much dead by 6pm, so weird!), but seeing so many people out in the streets celebrating was awesome. It was cold and kind of gross and ridiculously fun. We literally had Jello shots thrown to us from second story windows. It was madness, in the most amazing and entertaining way possible.
